Well I have said that student food doesn't have to be boring. This is true. But that doesn't discount those incredible student meals that erupt only in the event of facing a particularly barren fridge shelf and perhaps a craving for something simple, speedy and satisfying. Especially on a cold December day as the heating clicks in for only its second hour in a desperate bid to stay thrifty during the winter months. This quick and comforting recipe is a tribute to my much loved housemate for the first two years of University to satisfy both her carb and dairy craving days in one!
Cheesy Peppered Pasta (serves 1 but easily adapted to feed more)
75g Penne Pasta
A good handful of grated cheese (a mature cheddar ideally but whatever you have)
A good twist or two of black pepper
A good lug of Hendersons Relish/Worcester Sauce
1) Boil up the penne for about 10 mins (or until al dente/ cooked through with a slight bite keeping its shape) and add a good pinch of salt to the water to help bring out the flavour in the pasta.
2) Once cooked, drain the pasta in a colander and reserve about a tablespoon of the cooking water and return the pasta to the pan.
3) While the pasta is still hot, add the grated cheese and the pepper and stir through so that all the cheese melts to coat the pasta, it should have a stringy quality to it.
4) Serve the pasta and add a splash of Hendersons/Worcester Sauce to finish!
(If you have a little time, fry off some diced bacon and add that too for a poor man's carbonara).
